July Mystery Coffee Reveal - Nomad

History
La Palma & El Tucán is one of Colombia’s most visionary coffee projects and a global benchmark for regenerative agriculture. Founded to redefine traditional coffee farming, the project merges agroforestry with cutting-edge fermentation techniques and a deep commitment to community development.
Coffees grow under a polyculture system alongside banana trees, Hass avocado, native cedars, balú, and guama species that boost biodiversity, enrich the soil, and regulate the microclimate. Each plot is managed as a living ecosystem, designed to regenerate the land and elevate cup quality.

Process
This Sidra underwent an extended lactic fermentation: 88 hours in cherry, plus 24 hours mucilage fermentation. The coffee then dries slowly on raised beds for around 31 days (745 hours) before final mechanical drying. This careful process highlights its intense sweetness, creamy mouthfeel, and signature lactic acidity that sets this lot apart.
