About the processing:
EF2 processing, or “Extended Fermentation 2,” is a specialized fermentation process used to achieve unique flavor profiles in coffee. During this process, coffee cherries undergo an extended fermentation period under controlled conditions, allowing for the development of complex flavors. Fermentation can last from several days to weeks, depending on desired outcomes. This process takes place in dedicated tanks where temperature, humidity, and other factors are closely monitored, enabling precise control over fermentation and influencing the final flavor profile of the coffee.
Coffee processed with EF2 is known for its intense and complex flavors. It can exhibit fruity, floral, and even wine-like notes, depending on the duration and conditions of fermentation.
