Yilver Andrés Pajoy is a second-generation coffee grower from the vereda, or rural town, of Alto Cañada, in the municipality of La Plata, located on the western border of the department of Huila with the department of Cauca. Yilver is the cousin of fellow Osito partner producers Yesid Pajoy and Didier Pajoy. Didier also runs Osito's La Plata municipal warehouse and buying station. This is the first time cousins have placed in the top five for the western region.
Yilver has been growing coffee for the last 14 years at his four-hectare farm Finca El Arayan, which sits at 1,800 m.a.s.l. on the steep, green hills of La Plata. He is currently cultivating three hectares with 2500 trees per hectare of the Caturra, Caturra Chiroso, and Gesha varieties. Besides coffee, Yilver and his family grow beans and raise cattle.
His fifth-place-winning Gesha micro lot was fermented in cherry form for 36 hours after coming in from the coffee fields. The cherries were then de-pulped and dry-fermented for another 36 hours, rinsed and placed to dry on raised beds inside a parabolic greenhouse dryer for 18 days.
