November Mystery Coffee Reveal - Ordinary

Tasting notes: Green tea, Mango (yoghurt), Rosemary

This processing method is a variation of a washed process. First, the coffee is left to ferment aerobically in the open environment to promote an oxidated fermentation. The coffee is then pulped and fermented in a sealed tank for 48 hours in its mucilage before being washed, then dried in both indirect and direct sunlight for 20 days.

Jose Ignacio (Pepe) has a fascinating story. He was a mountaineer and expedition before becoming a farmer in 2015. He was the first Latin American to climb the highest mountain in every continent, went on expeditions to the north and south pole and now he’s settled in Finca Soledad where his passion has diverted towards coffee.

Finca Soledad is located in the Ecuadorian province of Imbabura in an area called Rio Intag. This big valley is dominated by the river Intag which comes from Andean peaks of more than 4000m. Cloud forests and exuberant vegetation is all around the steep mountainsides of this valley.

The farm sits at 1515 metres and has 5 hectares planted with arabica coffee. Pepe produces exclusive experimental nano lots, natural with extended fermetations and the main varietals are Caturra, Typica Mejorado, Sidra y Gesha
