🇪🇹 Ethiopia Wolichu Sodu

Wolichu Sodu is located in Uraga, about 30 kilometers from the village of Haro Wachu, and belongs to the Guji coffee-growing region of Ethiopia.
The washing station serves over 5,000 local smallholder farmers, who deliver their coffee cherry for processing. Upon arrival, the cherries are sorted by quality before processing.
While Ethiopia is home to a vast range of indigenous coffee varieties, it’s traditionally difficult to distinguish between them during harvest. As a result, most Ethiopian coffees are labeled under the broad term Heirloom. However, this particular lot is unusually identified as Bourbon, making it a rare example of a distinctly separated variety in the region.
Farmers and their families selectively handpick ripe, red cherry and deliver it to the Wolichu Sodu washing station. Upon intake, cherries are floated to remove any underripe or defective fruit.
Ripe cherries are spread in a single layer on raised beds to dry. Parchment is turned frequently, approximately every 30 minutes, to ensure even drying. As the cherry dries, workers continuously inspect and remove damaged fruit.
After several days, the cherries are gathered into slightly thicker layers to slow the drying process, while frequent raking continues. The full drying period ranges from 8 to 20 days, depending on weather conditions.
This particular lot was grown at an altitude of 2,100 to 2,310 meters above sea level, with a bean density of 878g/L and a moisture content of 10.2%.
